HB’s: A Treasured Beachfront Favorite

With its unrivalled shoreline setting in Old Naples, HB's offers dining at the ocean’s edge with a menu that focuses on fresh seafood. From casual “sandy toes” lunches to stylish evenings, the menu is anchored by local catch, raw-bar selections, and artfully prepared crudo.  With floor-to-ceiling glass doors, the views are always spectacular and when opened, the soft breeze and briny sea air drifts in further enhancing the magnificent sense of place.

Chef de Cuisine

Raised between the vibrant streets of Mexico City and the diverse landscapes of Canada, Maru developed a lifelong passion for exploring cultures through flavor. Over her 23-year culinary career, she has been driven by curiosity and a love for storytelling in every dish. Most recently, she led the culinary team as Chef de Cuisine for Daniel Boulud at d|bar in Four Seasons Hotel Toronto. Now, Naples and the seafood-forward menu at HB’s offer the perfect next chapter, allowing her to combine her culinary artistry with her love of diving and the serenity of the sea.

Fabio Quarta

Executive Chef

Growing up in Lecce, Puglia along the sun-drenched coast of Southern Italy, Chef Fabio feels very much at home in Naples, where he draws inspiration from the region’s fresh seafood and local produce. At HB’s at Naples Beach Club, Chef Fabio brings a deep respect for tradition paired with a modern, worldly sensibility – creating memorable dining experiences rooted in authenticity, freshness and creativity.

Eddy Dhenin

Executive Pastry Chef

Chef Eddy’s love of cooking started as a child in Saintes in southwest France, where Sundays were spent preparing elaborate family dinners with his father. That early passion evolved into a distinguished culinary career, and today he brings more than a decade of Four Seasons experience to HB’s at Naples Beach Club. His pastry creations – true edible works of art – have earned him numerous accolades.
